Vegetarianism (and a bonus gift)

Many of you who read on a regular basis might have caught on that I'm a vegetarian. I was recently talking to a friend (you know who you are), discussing how she didn't believe she could ever be one. I told her, like I tell most people, that you can eat surprisingly well.

When I talk to people about being a vegetarian, a lot of people look at me funny. Like I'm one of those people. To break the common stereotypes, I offer you the following:

1. I've never owned a pair of Birkenstocks in my life.

2. I did once have really long hair but I did it out of a love for Chris Cornell, not Jerry Garcia.

3. I own no tie-die.

4. I do not eat granola, meat-shaped things made from tofu, or 27 energy bars a day.

5. I do not believe that my vegetarianism will save a single animal. Its not a moral thing with me.

6. I love me some bacon. Bacon is my crack. But I resist.

I owe that certain friend a recipe. I figured I'd share with everyone.

Corn Chowder

2 tablespoons butter or margarine, divided
1 cup chopped onions
1 cup chopped celery
3 tablespoons all purpose flour
3 cups vegetable broth
1 cup peeled potatoes, diced into inch pieces
2 cups corn kernels
1/8 teaspoon dried thyme
1 bay leaf
1/3 cup heavy cream
teaspoon pepper
1/8 teaspoon salt

1. In a 3 quart saucepan, melt 1 tablespoon of the butter or margarine. Stir in the onions and celery; cook, stirring, until softened, about 3 minutes. Add the flour and stir until absorbed.

2. Add the broth and bring to a boil. Add the potatoes, corn, thyme, and bay leaf; return to a boil. Reduce heat and simmer 15 minutes or until the potatoes are tender. Discard bay leaf.

3. Stir in cream, pepper, and salt. Continue to cook, stirring, until heated through.

yummy. sounds good. I used to be a vegetarian. for like, three years. it was actually out of love of Jonathan Taylor Thomas (because he was just so damned cute). I still don't eat much meat, but some stuff I just... like too much. lol.

As a non vegetarian (and beef lover) I have to tell you that that recipe for Corn Chowder sounds great. I tend to opt for vegetarian meals a lot of the time, but I decided a long time ago that my crack (aka Steak) was too important to forgo forever. :)

And I have to laugh, because my husband was once in a look a like contest for Chris Cornell. This of course was 3 feet of hair and 50lbs ago (for him). It's amazing what one front man of a rock band can do for hair styles!

hey, that reciepe sounds pretty good....can i add chicken to it? LOL i don't eat much meat either. just chicken and tuna.

I stopped eating all meat about two years ago, but this year I went back to very occasionally eating non-fried seafood (no fish/shrimp battered and deep-fried for me, thanks -- only steamed or grilled).

It's not a moral issue for me either...I went through a phase a few years ago where I read a lot of health-related books, and just decided I didn't want to do that anymore. I drink soy milk too, and eat a lot of vegetables. I've definitely noticed how my taste buds have changed since I stopped eating meat...I eat a wider variety of things now than I used to, surprisingly.

I think you're psychic.

Back east, in the grocery stores, you can find the best brand of corn and clam (different soups, mind you) chowder: Snow's. Out here, they only have the clam, which I hate, and I continually whine about it.

I was whining about it Friday night when Jay bought his Snow's Clam and there was no Snow's Corn.

Then I went hunting for a corn chowder recipe, but wasn't finding anything good... but this looks fantastic! Yipee!!

i'm with alicia ... why ARE you a vegetarian? health?

i would probably die if i became a vegetarian. there's only about 5 vegetables i like: corn, peas, carrots, potatoes, lettuce. i think that's it. sad, i know. i keep trying the ones i don't like, but i'm such a texture person. and i can't stand the texture of a lot of fruits and vegetables.

i do eat more veggies than your average person though, so that counts for something, right? right?? ;)

I'm trying to be a vegetarian...I still eat fish and sometimes chicken though.

And I do eat meat made out of tofu. Boca Burgers and those Pizza Burgers from Trader Joe's rock!

Oh my. That corn chowder sounds DELICIOUS! Thanks for sharing the recipe!

I've owned Birkenstocks, and even had a tie-dyed t-shirt (back in college), but I'm not ready to give up a good steak. However, I don't eat meat daily, and I will be making your corn chowder soon!

Vegetarianism is a great life choice, Chris. I find that I lean toward vegetarianism myself these days, simply because I feel healthier when I eat that way. Once I stopped eating the greasy burgers and fries, I find that my stomach turns when I think of them now. My kids always want McDonald's and I just can't eat it... I get theirs to go, and fix something for myself when I get home.

I think I'd lose it if I couldn't eat meat. For me, there's not much that beats a perfectly-done medium rare porterhouse :) Anyhow, I think I like about 3 vegetables and I'm trying to cut down on pasta and white flour products, so what would I be left with to eat?!? LOL
